I have been trying out new Chinese recipes. My boys are semi-open to most of them. The girls are always open to them, just as long as they don’t have real fruit in them. So my latest attempt was with lettuce rolls.
I used red leaf lettuce because that is what I had on hand but you really need romaine or iceberg because it holds it’s shape better. They still tasted great though, just a bit messy with the leaf lettuce. So how did the kids do….
The boys got a little hung up on the lettuce so I switched them to spinach. It went down a little better but Luke still struggled with it. He tends to be a bit picky (although he is no where near as picky as a kid as I was so I am counting my blessings.)
